Spanish Girl in the USA


One of my favorites pasta dishes in a week night are this broccoli bow tie. A healthy, yummy and super fast dinner made in minutes.

Nutritional facts: 
Calories 335; 22.8 gr. of Carbohydrates; 7 gr. of Proteins; 14.5 gr. of fat; 2 gr. Fiber; 51.1 mg of cholesterol, 237.4 mg of sodium and 343 mg. Potassium.

Ingredients:
  • 350gr cooked bow ties 
  • 400gr broccoli florets 
  • 4 bacon slices 
  • 100ml evaporated milk 
  • Parmesan cheese 
  • Optional: Chili flakes 
Directions:
  • Boil pasta according package directions. 
  • In the remaining 3 minutes, add the broccoli and cook. Before drain the pasta, reserve ½ cup of the cooking water. 
  • Meanwhile, cut the bacon in small pieces and saute in the skillet until it get crispy. 
  • Add the evaporated milk and the reserved cooking water from the pasta. Bring it to boil and let simmer for 5 minuts or until the sauce starts to thicken. 
  • Add the pasta and broccoli into the sauce, mix well and top with grated Parmesan cheese and a pinch of pepper 

TIPS
  • If you want to add some kick flavors, you can use chili flakes or for a deep flavor, 1 teaspoon of smoke paprika. 
  • If you can't find bow tie pasta, another one that suits well in this recipe are rigatoni or rotini. A medium size pasta.

If we think about Spain gastronomically speaking, one of our most famous dishes are the paella, the jamón serrano and of course, our tortilla de patatas.
Though is true that you can find many tortillas de patatas flavors such bell pepper, onions, eggplant, spinach, etc; the most iconic tortilla is the classic version, the one we call "la rubia" (the blond) cause of her perfect golden color.


Ingredients:
  • 1.6lb potatoes
  • 4 large eggs
  • 16oz Oil
  • Salt
Directions:
  • Peel the potatoes and cut them into small cubes. Wash and season them with salt.
  • In a deep pan pour the oil to fry; wait until the oil is hot and start frying the potatoes in batches. Once fried, reserve them in a big bowl.
  • Meanwhile, beat the eggs until they are foamy. Add a pinch of salt and mix.
  • Pour the eggs into the potato bowl and combine with very soft movements.
  • Into a medium size skillet pre-heated with 2 tablespoons of olive oil pour the mixture, cover and let it cook on low-medium heat for 4-5 minutes.
  • Place a plate of the size of the skillet on top of it and flip the tortilla. Push it glently back into the pan and let it cook for another 4-5 minutes. 
Perfect for any week night, lunch boxes, pot luck reunions and for us, very typical to bring to our picnics and outdoors bbq days.
