Maple-Bacon Cheesecake Biter

When you love food you tend to shop for magazines, you get excited every time you discover a new product, you create a huge cookbook collection, spend all your free time on YouTube watching videos of your favorites chef's and no matter if you're traveling outside the country because enven at that time, your passion is chasing you and this is something that happened to me.
I never thought to use bacon in a cheesecake but the flavor combination is stunning.

Nutrition Info (per serving): 248 Calories; 10 gr. Fat; 3 gr. Protein; 7gr. Carbs; 32 mg. Cholesterol and 151 mg. Sodium.

Ingredients:
  • 16 bacon slices
  • 1/2 cup all-purpose flour
  • 2 tbsp ground toasted pecans
  • 1 tbsp sugar
  • 1/4 cup butter
  • 1 8-oz. pkg. cream cheese; softened
  • 3 tbsp butter; softened
  • 2 tbsp pure maple syrup
  • 1 egg
  • 14/ tsp apple pie spice
  • 1/4 cup pure maple syrup
  • 1/4 cup chopped toasted pecans
Directions:
  • Preheat oven to 400ºF and bake 4 slices of bacon 2 to 4 minutes and crumble. Low the oven to 350ºF
  • Grease 12 muffin cup tray and arrange the remaining 12 bacon and reserve.
  • In a bowl, stir together flour, ground pecans, 1/4 cup softened butter until crumbly.
  • Sprinkle this mixture into each bacon-lined muffin cup, press down with fingers and bake for 6 minutes.
  • Meanwhile, for filling, in a bowl beat cream cheese, the 3 tbsp butter and the maple syrup with a mixer on medium until light and fluffy.
  • Beat in egg and apple pie spice, stir in cumbled bacon.
  • Spoon filling into partially baked crusts. Bake 15 minutes more or until filling is set.
  • Cool in muffin cups on a wire rack 5 minutes. Carefully remove from muffin cups; cool on wire rack.
  • Cover and chill 1 hour or until firm or up to 24 hours.
Before serving, drizzle with maple syrup and sprinkle with chopped pecans.


TIPS

- If prefer, you can use this recipe with a twenty-four 1 3/4-inch muffin cups; just need to cut in half crosswise the bacon or make the cheesecake with a large springform pan.
